Summer Smoothie Bowl Recipe

This summer smoothie bowl has been my go-to breakfast/brunch meal all summer long! It has all the power-packed nutrients and vitamins I need to start my day. It ticks all the boxes with fruit, fibre, carbs, protein, fat, veggies & fruit.

Smoothie Bowl Ingredients:

2 Scoops of protein powder of your choice (I use chocolate, but any will do)
2 TBSP greek yogurt
1 Cup frozen cauliflower rice
1/2 Cup frozen fruit of choice (Keep a few aside for topping)
1/2 Cup milk of choice (I use unsweetened almond, but again, any will do)
1 TBSP of fat of your choice (nut butter, chia seeds, flax or flaked coconut are great options)

Blend all smoothie bowl items together until it is the texture of ice cream or mousse, usually 1-2 minutes depending on your blender, top with a few of your favourite berries and seeds, or and serve!

If you’re nervous about the cauliflower rice, don’t worry, you can’t taste it, but it adds the perfect amount of volume and thickness!
